COCONUT-RAISIN COOKIES 
1 c. shortening or butter
1 c. sugar
1 egg
1 tsp. vanilla
1 3/4 c. sifted flour
3/4 tsp. baking powder
1/8 tsp. salt
1/4 tsp. cinnamon
1/8 tsp. nutmeg
2 c. coconut
3/4 c. raisins

Cream first 4 ingredients. In separate bowl sift flour, baking powder, salt, cinnamon and nutmeg. Stir in creamed mixture. Add coconut and raisins; mix thoroughly. Drop dough on ungreased cookie sheet in large teaspoonfuls 2" apart. Bake at 375 degrees for 10 minutes. Cool on sheets a few minutes. Remove cookies from sheets and finish cooling on racks. Makes 6 dozen small cookies or 3 to 4 dozen large. Use extra raisins.
