SUNNY SPINACH SALAD 
1 lg. can mandarin oranges
1 med. red onion, chopped or sliced
1 lb. fresh spinach, trimmed and washed

DRESSING:

1 1/2 c. sugar
1 c. vinegar
1 tsp. prepared mustard
1 tsp. salt
2 eggs, beaten

Combine all dressing ingredients. Bring to a boil. Remove immediately from heat. Refrigerate dressing until ready to serve. Toss onion, oranges, and spinach together. Pour dressing over salad just before serving. Serves 8.
