POTATOES AND CHEESE 
10 c. potatoes, diced into 1 sq.
1 med. onion, diced
1 tsp. salt
1 1/2 sticks butter
8 tbsp. flour
1 pkg. cheese sauce, from a box macaroni/cheese dinner
2 1/2 inch chunk Velveeta cheese
4 c. milk

Boil potatoes, onions and salt until potatoes are done; drain. Melt butter, stir in flour and package of cheese sauce. Stir in milk and cut cheese and add. Cook on medium heat stirring constantly until thickened. Place potatoes in large casserole dish. Pour cheese sauce over potatoes. Place in microwave or oven until hot.

NOTE: Can use this cheese sauce over cooked cabbage, broccoli, or cauliflower.

Since microwave ovens vary in power, you may need to adjust your cooking time.
