VEGETABLE CHOWDER | |
1 qt. okra 2 c. diced celery 1 green pepper 1 sm. onion 1/4 c. butter or bacon dripping 2 lg. tomatoes (or 1 can tomatoes) 1 tsp. brown sugar 1 tsp. paprika 4 c. boiling water Cut stems from okra and slice. Saute vegetables for 5 minutes. Skin tomatoes, then chop and add. Simmer vegetables gently for 30 minutes. Add salt and paprika. Can add cooked chicken, fish or bacon diced. Serve with rice. |
