GRANDMA BICKNELL'S SOFT MOLASSES
COOKIES
 
1/2 c. shortening
1/2 c. brown sugar
1 c. molasses
4 c. flour
2 rounded tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. salt
1/3 c. cold water
1/3 c. cold coffee

Mix all ingredients, saving aside 2 cups of flour. Gradually add remaining flour to make mixture soft but past sticky stage. Put in refrigerator overnight. Pat out to about 1/2 inch thickness. Cut with round cookie cutter. Bake at 400 degrees for 8 minutes.
