TACO LASAGNE 
1 lb. lean ground beef
1 (10 oz.) can chopped tomatoes
1 (8 oz.) can tomato sauce
1 pkg. dry taco mix
1 beaten egg
8 oz. sm. curd cottage cheese
1/4 lb. shredded Monterey Jack cheese
1 (7 oz.) bag tortilla chips
1/2 c. Cheddar cheese
Salt to taste
Dash of pepper

Preheat oven to 350 degrees. Brown meat; drain. Add tomatoes, tomato sauce, dry taco mix, salt, pepper. Simmer 2 minutes.

Combine egg and cottage cheese. Stir well. Add to meat sauce mixture and mix thoroughly. Spread 1/2 meat sauce in lightly greased 8 1/2 x 12 inch casserole dish. Top with half of Monterey Jack cheese and single layer of tortilla chips. Repeat layers. Add Cheddar to top. Bake 30 minutes. Great leftover, too!

Serves 4 to 6.
