TURKEY TACO LASAGNA | |
1 lb. ground turkey 1/2 c. picante sauce 1 (16 oz.) can undrained red kidney beans 2 c. shredded cheddar cheese 4 (6-inch) corn tortillas 1 pkg. taco seasoning mix Put 2 paper towels in bottom of 1-quart microwave-safe bowl. Crumble in meat. Microwave uncovered on high 1 1/2 minutes. Stir to break up meat. Microwave 1 1/2 to 2 minutes more until no longer pink. Discard paper towels. Add seasoning mix to meat and stir until well blended. Measure and reserve 1/4 cup of the cheese. Place 1 tortilla in bottom of a 2-quart microwave-safe bowl or deep casserole. Top with 1/4 of the meat mixture. Sprinkle with 1/4 of the remaining cheese. Repeat layers 3 times. Pour beans with their liquid over top. Cover with sauce and sprinkle with the reserved 1/4 cup cheese. Microwave uncovered on high 6 to 8 minutes until hot. Makes 6 servings. |
