4 lemons (1 c. lemon juice) 1 qt. water 1 orange 1 lb. sugar Rinds of 2 lemons or 1 tbsp. rind Put the sugar and water on to boil, boil about 5 minutes. Then add the juice from 4 lemons, the grated rind of 2 lemons, and orange. When this comes to a boil, set aside until cold, then freeze it hard. Yield: 2 quarts. FOR PINEAPPLE ICE: Take half gallon of rich syrup made of sugar and water. Boil 5 minutes, then add 16 ounces of crushed pineapple and juice. The juice of 2 lemons to the syrup mixture, freezer until slightly thickened. Then fold in 2 egg whites, beaten stiff and finish freezing. You can make fresh fruit Ices by using 2 cups fruit juice and 2 cups crushed fruit. Then add to syrup mixture and freeze. Ices can be frozen in churn freeze and served immediately. Lemon Ice is delicious served on fresh fruit salad. |
