OATBRAN MUFFINS (NO
CHOLESTEROL!)
 
2 1/4 c. oatbran
1 1/4 tsp. cinnamon
1 tbsp. baking powder
1/4 c. chopped nuts
1/4 c. chopped dates
1/2 c. skim milk
3/4 c. frozen apple juice concentrate
2 egg whites
2 tbsp. vegetable oil
2 med. apples, cored and chopped

Mix all ingredients by hand. Bake in muffin tins for 20 minutes at 350 degrees. Makes 1 dozen.
