BRAN MUFFINS - HIGH FIBER - LOW
CHOLESTEROL
 
2 c. 100% bran cereal
1 1/4 c. skim milk
1 c. all-purpose flour
1/3 c. packed brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 c. Fleischmann's butter
1/4 c. egg beaters

Combine bran and milk; let stand 5 minutes. Combine next four ingredients; set aside. Mix butter and egg into bran mixture. Stir in flour mixture until blended. Spoon into 12 Pam sprayed 2 1/2 inch muffin pan cups. Bake at 400 degrees for 18 minutes or until done. (You may add raisins or nuts to batter.)
