LOW CHOLESTEROL OATMEAL COOKIES 
1 1/4 c. butter (2 1/2 sticks)
3/4 c. packed brown sugar
1/2 c. granulated sugar
1/4 c. Egg Beaters
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
3 c. Quaker Oats (quick or old fashioned, uncooked)
1 c. raisins

Heat oven 375 degrees F. Beat together butter and sugars until light and fluffy. Beat in Egg Beaters and vanilla. Combine flour, baking soda, and spices; add to butter mixture, mixing well. Stir in oats and raisins.

Drop by rounded tablespoon onto ungreased cookie sheet. Bake 8-9 minutes for chewy cookie, 10-11 minutes for crisp cookie. Cool 1 minute on cookie sheet. Remove to wire cooling rack. Makes 4 1/2 dozen. Delicious!
