OAT SHORTCAKES 
1 c. butter, softened
1 tsp. vanilla
1 c. flour
1 c. quick rolled oats
2/3 c. lightly packed brown sugar
2/3 c. flour

Beat butter, brown sugar, and vanilla until light and fluffy on medium speed. On low speed, gradually add 1 cup flour. With wooden spoon, stir in remaining flour and rolled oats until soft dough forms.

Divide dough into 3 balls. Pat on cookie sheet into 5 or 6 inch circle each. Take fork and score into 8 pie-shaped pieces. Bake 12 to 15 minutes in 350 degree oven. Cut scored areas upon taking out of oven.
