CHEF KURT'S HAM & CHEESE QUICHE | |
This recipe only uses two eggs. 1 (9-inch) Deep Dish pie crust 1/2 cup diced cooked ham 4 or 5 slices processed cheddar cheese 1/2 cup shredded Swiss cheese 1 cup shredded cheddar cheese, divided 3/4 cup milk 2 large eggs eggs, beaten 1/4 cup green onions 1/3 cup dairy sour cream 1/3 cup cottage cheese 1 1/2 tbsp. all-purpose flour 1 tbsp. whole cracked or Dijon mustard 1/4 tsp. salt 1/4 tsp. pepper Preheat oven to 400°F. Whisk milk, eggs, green onions, sour cream, cottage cheese, flour, mustard, salt and pepper together in bowl. Set aside. Bake pie crust in preheated oven for 5 minutes, use a fork to poke holes into the crust, and continue cooking until lightly browned, about 5 minutes more. Reduce oven heat to 350°F. Remove crust from oven. While the crust is still warm, line the inside of the crust with the processed cheese slices (a piece here, a piece there, as best you can to cover as much of the bottom and sides as you can). This keeps the liquid from absorbing into the crust and making it soggy. Add diced ham evenly to bottom of crust. Sprinkle the Swiss cheese and 3/4 cup of the cheddar over the ham. Whisk your egg mixture again and carefully pour egg mixture over the ham and cheese layer. Top with remaining cheddar cheese. Bake in preheated 350°F oven until set in the center 50 to 55 minutes, or until a tooth pick comes out clean. Cool for 15 minutes before cutting. Submitted by: Chef Kurt |
