EBLE SKIVERS (DANISH) 
2 c. flour
1/2 tsp. salt
1 1/4 tsp. baking soda
3/4 tsp. baking powder
2 tsp. cardamom
2 c. buttermilk
2 eggs, separated
3 tbsp. butter

Sift together dry ingredients. Beat egg yolks. Add to milk. Combine with dry ingredients. Add butter. Fold in beaten egg whites.

Fry in greased eble skiver pan. (I put pan directly on electric burner, but used a skillet underneath on gas burner.) Fry until golden brown on bottom, then turn with toothpick or other pointed utensil.

San be served with syrup, applesauce, etc. (just like pancakes).

In Denmark we use a knitting pin to turn them. The name "eble skiver" in Danish: "Æbleskiver", means apple slices- in the 17th century it was common put slices of apple in them, but this is very rare today, though some people still add a little apple jam or sweetened, puréed apple to the dough. Eble skivers are called "Munker" (litterally "monks") in Norway and Förtchen in Germany.

Ooops!!! I forgot: If you add apple puré or apple marmelade or small slices of apple, you have to put them into the eble skive after it is baked on one side! Never put it in the dough!
