CARROT ORANGE LOAF BREAD | |
2 c. whole wheat flour 2/3 c. sugar 1 1/2 tsp. baking powder 1 tsp. ground cinnamon 1/2 tsp. baking soda 1/3 c. safflower oil 1/2 c. skim milk 3 egg whites 1 tsp. grated orange peel 2 c. shredded carrots Preheat oven to 350 degrees. Oil a loaf pan, set aside. Combine flour, sugar, baking powder and cinnamon; set aside. In a large bowl, mix safflower oil, milk, egg whites, and orange peel. Add dry ingredients. Mix just until combined. Stir in carrots. Pour into oiled pan. Bake until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in pan 10 minutes. Loosen with a metal spatula, turn onto wire rack to cool. Yield: 16 slices. 1 serving size: 133 calories; 2.5 gm fat; tr. cholesterol; 64 mg sodium. |
