ALMOND COOKIES 
1 lb. almond paste
1 c. sugar
2 c. powdered sugar
3 to 4 egg whites (1/2 c.)
1 tsp. vanilla
1 tsp. almond extract

Beat egg whites. Mix all ingredients together with fork until smooth. Line cookie sheets with brown paper and drop by teaspoon on paper. Bake 20 to 25 minutes in a 325 degree oven. After cookies are done, transfer brown paper to a wet towel. Remove cookies when cool.
