ZUCCHINI MUFFINS 
2 1/2 c. flour
2 eggs
1 1/4 c. sugar
3/4 c. & 1 tbsp. oil
2 1/2 c. grated zucchini
2 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. buttermilk

Preheat oven to 350 degrees. Grease 24 muffin tins. In a large bowl combine all ingredients. Mix well. Pour into muffin tins, 2/3 full. Bake 25 minutes.
