ZUCCHINI MUFFINS 
3 eggs
1 tsp. vanilla
2 c. sugar
1 c. oil
2 c. grated zucchini
2 c. flour
1 tsp. salt
2 tsp. baking soda
2 tbsp. cinnamon
1 c. walnuts

Beat eggs over boiling water (in double boiler) until frothy. Remove water from burner but continue beating over hot water. Add sugar, beating well. Add vanilla and oil. Beat until thick and lemony. Take off hot water and stir in rest of ingredients. Pour into muffin tins. Bake at 350 degrees for 20 to 30 minutes. Makes about 2 dozen muffins.
