APPLE-CARROT CASSEROLE 
4 c. apples, thinly sliced
3 c. carrots, sliced lengthwise
8 tbsp. sugar
4 tbsp. or less cornstarch
Pinch of salt
1 1/2 c. orange juice

Cook carrots until almost done. Layer apples and carrots in casserole. Sprinkle sugar, cornstarch and salt over dish. Pour orange juice over top. Bake at 350 degrees for 40 to 50 minutes.
