DATE OATMEAL BREAD 
3/4 c. milk, scalded
1 1/2 c. rolled oats (quick or regular, uncooked)
1/4 c. butter
1/4 c. sugar
1 1/2 tsp. salt
1 pkg. yeast, active
1/4 c. lukewarm water
2 eggs
1 c. chopped dates
1/2 tsp. cinnamon
3 1/2 c. sifted flour

Pour hot milk over 1 cup oats. Add butter, sugar, and salt. Cool to lukewarm. Dissolve yeast in lukewarm water; add to cereal mixture. Stir in eggs, dates, cinnamon and 2 cups of flour. Add flour as needed to make stiff dough.

Turn onto lightly floured board. knead until smooth and elastic. Place in greased bowl. Turn once to grease top. Cover and let rise until double in size. Punch down; let rest 10 minutes. Shape in loaf. Brush outside with water; roll in remaining 1/2 cup of oats. Let rise until double in size. Bake in 350 degree oven until done, about 50 minutes.
