PLUM OATMEAL BREAD 
4 c. flour
1 1/3 c. brown sugar, packed
2 tbsp. baking powder
2 tsp. salt
2 tsp. cinnamon
2 c. quick-cooking oats
1 (30 oz.) can Thank You purple plums (packed in syrup), drained (reserve juice), pitted & chopped
2 eggs, beaten
1/2 c. vegetable oil

Combine flour, sugar, baking powder, cinnamon, salt and oats. Stir chopped plums into mixture to coat well. Add enough water to the plum juice to make 1 1/2 cups liquid. Combine plum juice, eggs and oil; add to flour mixture, stirring until dry ingredients are moistened. Pour into 2 greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans. Bake at 350 degrees for 60 to 70 minutes.

Note: Flavor develops when wrapped and stored overnight.
