PLUM OATMEAL BREAD 
4 c. flour
1 1/3 c. packed brown sugar
2 tbsp. baking powder
2 tsp. cinnamon
2 tsp. salt (optional)
2 c. quick cooking oats
1 (30 oz.) can Thank You Purple Plums packed in heavy syrup
2 eggs, beaten
1/2 c. vegetable oil

Drain plums and reserve juice. Remove pits and chop plums. In mixing bowl, combine flour, sugar, baking powder, salt, cinnamon and oats. Stir chopped plums into flour mixture. Coat well. Add water to plum juice to make 1 1/2 cups liquid, mix plum juice, eggs and oil. Stir into floured 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans. Bake at 350 degrees for 60 to 70 minutes. Cool 10 minutes. Remove from pans and cool. Store wrapped overnight to develop flavor.
