14 - DAY SWEET PICKLES | |
Use stone crock or plastic. 1st week - soak 1/2 bushel fresh pickles in salt water. (1 1/2 cups salt in 1 gallon water.) Weight down so all are covered. (Skim off any mold as it appears.) 1st day: Drain and cover with boiling water (keep weighted down until put into jars). 2nd day: Drain, slice, then add 1 heaping tablespoon alum. Cover with boiling water. 3rd day: Drain. Cover with boiling water. 4th day: Mix and bring to a boil: 18 c. sugar (10 lb.) 3-4 sticks cinnamon 1 heaping tsp. celery salt 1 heaping tbsp. whole cloves Drain cucumbers and cover with boiling syrup. 5th day: Drain off syrup, boil syrup and cover pickles. 6th day: Repeat day 5. 7th day: Repeat. 8th day: Drain. Pack in clean jars. Pour boiling syrup over and seal. |
