ZUCCHINI CASSEROLE 
6 c. grated zucchini
1 c. grated carrots
1/4 c. grated onion
1 c. chopped celery
2 c. cubed chicken or 1 lb. ground beef
1 c. sour cream
1 can soup, mushroom or chicken
1 can sliced water chestnuts
1 box Stove Top Stuffing

Cook vegetables in small amount of water until just tender. Drain. Mix sour cream and soup together and add to vegetables. Add chicken or beef and water chestnuts. Melt 1 cube butter in skillet and add seasoning mix from Stove Top Stuffing mix. Then add bread cubes and stir. Place about half of bread cubes in bottom of 9 x 13 inch pan, put vegetable mixture on top, then top with remaining bread cubes. Bake at 350 degrees until bubbling, about 35 minutes. Sprinkle 1 cup grated cheese on top and return to oven until melted.
