EASY FLOUR TORTILLAS
4 c. all-purpose flour
1 1/2 tbsp. salt
1 1/2 tbsp. baking powder
1/2 c. lard or shortening
1 c. cold water

Mix all dry ingredients well. Add shortening to flour mixture and blend with a pastry fork. Mix until mixture appears crumbly. Gradually add water and knead into a soft ball. Dough should not be sticky; add more flour if it is. Separate dough into fifteen balls. Roll out into circles about 1/4 inch thick. Cook on a hot griddle for about 30 seconds each side, or until golden brown bubbles appear on the tortilla.

Tortillas may be eaten as a bread or used for burritos or eaten as a snack with your favorite jam or topping.
