SOUR CREAM-POTATO CASSEROLE 
1 c. sour cream
1 c. large curd cottage cheese
2 c. leftover mashed potatoes
1 onion, minced
4 oz. chopped pimento, drained
2 eggs
2 tbsp. butter
3/4 tsp. salt

Use instant potatoes if you don't have leftovers.

Combine all ingredients. Put into buttered 1 1/2-quart baking dish.

Bake at 350°F for 1 hour.

Tasty and nutritious.
