BROCCOLI SOUP 
1 1/2 lbs. broccoli
1/2 c. chopped onion
1 tsp. pepper
1 tbsp. salt
2-3 cloves garlic
1/4 tsp. thyme
1 qt. milk
1/4 lb. butter
1/3 c. flour

Cook spices and broccoli in a small amount of water until broccoli is soft. To make roux, mix butter and flour. Heat milk to almost boiling; add roux to thicken 5-10 minutes on low heat. Heat and add broccoli. Heat until ready to serve.
