SICILIAN SURPRISE 
3 c. eggplant, chopped
1/2 c. green pepper, chopped
1 onion, chopped
2 cloves garlic, chopped
1/2 c. olive oil
1 c. tomato paste
4 oz. mushrooms, sliced
1/4 c. water
1/2 c. stuffed olives, sliced
1 1/2 tsp. sugar
1/2 tsp. oregano
Salt and pepper
Worcestershire sauce

Combine first 4 ingredients with oil and cook 10 minutes. Add remaining ingredients and simmer 20 to 30 minutes, or until vegetables are tender. Serve as a side dish or over pasta.
