TURKEY CURRY 
1/4 c. chopped onions
1/4 c. (1/2 stick) butter
1 tbsp. curry powder
1 tsp. salt
2 1/2 c. milk or 1 1/2 c. milk and 1 c. turkey broth
1/4 c. flour
2 c. diced turkey
1 c. diced peaches
1/4 c. diced celery
1 tbsp. lemon juice
Cooked rice

Saute onion and butter; add curry and salt. Saute further for 1 minute over low heat. Add flour; blend well. Cook 1 minute, stirring constantly. Remove from heat; add milk or broth if used, stirring constantly. Return to heat. Add remaining ingredients. Simmer for 5 minutes. Serve over cooked rice. Sprinkle with chopped peanuts, if desired. Makes 6 (2/3 cup) servings. 4 cups.
