FIVE LAYER MEAL | |
1 lb. ground beef 1 tbsp. shortening 1 1/2 tsp. salt 2 tsp. chili powder 1/3 c. uncooked rice (long grain) 1/3 c. water 2/3 c. chopped onion 2/3 c. chopped green pepper 2 lg. white potatoes, thinly sliced 1 lb. can (#303) tomatoes 1/3 c. catsup Black pepper (optional) Place 1 tablespoon shortening in skillet. Add ground beef and onions. Brown. Stir frequently. Add salt, pepper and chili powder. Remove from skillet. Cover bottom of skillet with thin potato slices. Sprinkle uncooked rice over potatoes. Spread meat mixture on top of rice. Sprinkle chopped green pepper over meat mixture. Add can of tomatoes. Add water to catsup and pour over mixture. Do not stir. Cover pan and bring mixture to simmering. Cook 30 minutes. Cut in squares to serve; each layer can be identified. |
