MEAL IN A POT 
3 or 4 lg. potatoes, peeled and sliced
6 slices bacon, 3 slices diced
1 med. onion, diced
1 carrot, diced
1 rib celery, sliced
Salt and pepper
1 center cut slice of ham, fat removed (several hot dogs or link of Polish sausage can be substituted)

Line 3 quart pot with 3 slices of bacon. Add 1 layer of sliced potatoes. Then add layer of vegetables and bacon mixed. Add another layer of potatoes, then vegetables. Finish with layer of potatoes. Lightly salt and pepper between layers. I don't use salt because meat will be seasoned enough. Pour a good 1/2 cup of water over vegetables. Place meat choice on top. We like ham best of all.

This next step is very important: Take a clean white dish towel, not terry cloth. Fold to fit top of pot, wet towel well, squeeze out excess water (do not wring). Pack towel on top of pot contents and cover with lid. Cook on fairly high temp until you hear water boiling, turn down to simmer. Check periodically by lifting towel and meat and testing top layer of potatoes with fork. If top layer of potatoes are tender then the whole pot is done.

Additional seasoning may be added by individuals to taste.

This dish can be varied by adding other vegetables like chopped broccoli or cauliflower to those mentioned above.
