FIVE LAYER MEAL
1 lb. ground beef
1 tbsp. shortening
1 1/2 tsp. salt
2 tsp. chili powder
1/3 c. uncooked rice, (long grain)
2/3 c. chopped onion
2/3 c. chopped green pepper
2 large white potatoes, thinly sliced (1 to 1 1/2 lb.)
1 lb. can (#303) tomatoes
1/3 c. ketchup
2/3 c. water
Black pepper as desired

Place 1 tablespoon shortening in skillet. Add ground beef and onions. Brown. Stir frequently. When meat is brown, drain. Add salt, chili powder and black pepper to meat and mix well. Remove from skillet. Cover the bottom of the fry pan with the thin potato slices. Sprinkle uncooked rice evenly over potatoes. Spread beef mixture on top of the rice. Sprinkled chopped green pepper over the beef mixture. Add water to ketchup and pour over mixture. DO NOT STIR. Place lid on pan and turn heat high to bring mixture to cooking temperature. When steam escapes from under the lid, turn the heat low and cook 30 minutes. Cut in squares to serve: each layer can be identified.
