MONASTERY FRUITCAKE 
2 1/2 c. flour
1 tsp. baking soda
2 eggs, beaten
1 (28 oz.) jar mincemeat
1 (14 oz.) can condensed milk
1 tsp. rum flavoring or extract
2 c. candied fruit
1 c. chopped walnuts

Mix separately. Dry ingredients and then wet. Blend them together, mixing well and pour into 2 greased loaf pans (9 x 5 inch). Bake at 300 degrees for 1 hour and 25 minutes. Check with a toothpick at middle to be sure they are done. Cool in pan for 10 minutes, then wrap immediately in aluminum foil to retain moistness. Enjoy!
