HOT SALMON MELTS 
1 (15 1/2 oz.) can salmon or 2 (7 1/2 to 7 3/4 oz.)
1/3 c. mayonnaise
2 tbsp. onion, minced
2 tbsp. parsley, minced
2 tbsp. pimento, chopped, drained
Dash of pepper
2 tsp. lemon juice
3/4 c. Cheddar cheese, shredded (divided)
8 slices French bread or split English muffins

Drain salmon, break into large chunks. Add mayonnaise, parsley, onion, pimento, lemon juice and pepper; toss gently to mix. Fold 1/2 cup cheese. Spread about 1/4 cup mixture on each slice of bread. Sprinkle remaining cheese over salmon mixture. Broil about 6 inches from heat 3 to 4 minutes or until cheese melts and tops are golden. Makes 6 to 8 servings.
