FRIED RICE WITH CARROTS 
1 tbsp. peanut or sesame oil
3/4 c. onions, diced
4 eggs, beaten
1 c. carrots, diced
2 c. cooked rice
2 tbsp. butter
Soy sauce

Heat oil in wok or large skillet and add onions. Add beaten eggs and cook until light and fluffy. Stir in carrots and cooked rice. Add butter. Add soy sauce to taste. Cook for 5 minutes over medium heat, stirring frequently. Great with stir fry.
