FRIED CARROTS 
2 carrots, shredded
1 tbsp. chopped onion
1/3 c. water
2 tbsp. flour
2 tbsp. cornstarch
1 tbsp. vegetable oil
1 egg white
1/4 tsp. baking soda

Mix water, cornstarch, flour, oil, egg white, salt and soda in bowl until smooth. Stir in carrots and onions into batter. Lift mixture with slotted spoon and fry in hot oil until golden brown. About one minute on each side. Drain on paper towel.
