GRANDMOTHER'S CARAMEL PIE 
6 eggs, separated
2 c. sugar
1 sm. can evaporated milk
Plus enough milk to make 2 c.
5 tbsp. flour
2 tbsp. butter

MERINGUE:

6 egg whites, beat until soft peaks
Gradually add 1/2 c. sugar
1 tsp. vanilla
1/8 tsp. cream of tartar

In a double boiler, mix 1/2 cup sugar and flour. Add egg yolks and milk. Heat until mixture is hot, stirring constantly. In a cast iron skillet, stir 1 1/2 cups sugar over medium heat. When sugar begins to melt and turn brown, it will form lumps, but eventually all will melt into a brown syrup. Add a couple ladles of milk mixture into syrup. It will bubble up, so stir quickly.

Pour syrup mixture into double boiler. Cook, stirring constantly until thick, using a wire whisk. Pour into 10 inch bake pie shell. Top with meringue. Bake at 350 degrees until browned.
