LO CAL LEMON CHEESECAKE | |
1 c. graham cracker crumbs 2 tbsp. melted butter 2 c. low fat cottage cheese 2 egg whites 2 whole eggs 1/2 c. evaporated skim milk 1/3 c. sugar 1 tbsp. lemon rind 1/3 c. fresh lemon juice For crust, combine cracker crumbs and butter. Press into bottom of 9 inch springform pan. Store in freezer until filling is prepared. Preheat oven to 300 degree. Process filling in blender or food processor until smooth. Add 1/4 cup flour and blend well. Pour into chilled crust. Bake 1 hour or until set. Cool cake, loosen edge of cake with thin knife before removing sides of pan. Garnish with lemon slices. 1 slice is fewer calories than 1/2 of a sandwich! |
