WILD AND DIRTY RICE | |
1 c. chopped celery 3/4 c. chopped green peppers 3 cloves garlic, minced 3 tbsp. chopped parsley 5 green onions, chopped 1/2 c. olive oil 1 sm. box uncooked wild rice 1 c. white uncooked rice 4 c. hot chicken broth 2 cans sliced mushrooms drained 1 fryer cooked and chopped (boiled) 1/2 c. slivered almonds 1 tbsp. salt 1 tsp. black pepper 1/4 tsp. cayenne pepper Saute vegetables in olive oil until tender, add remaining ingredients. Pour into a lightly greased 3 quart casserole. Cover and bake at 250 degrees for 1 hour and 15 minutes. 8 to 10 servings. You can pour ingredients in rice cooker and put on cook until done. |
