BRISKET OF BEEF 
4-6 lb. brisket
2 oz. liquid smoke
Celery, onion and garlic salt
Salt and pepper
Worcestershire sauce
Barbeque sauce

Place flat side down in 9 x 13 inch pan. Sprinkle with liquid smoke, celery, onion and garlic salt. Cover tightly and place in refrigerator overnight for 12 hours. Drain off liquid, sprinkle with salt and pepper and Worcestershire. Cover loosely with foil - bake 4 hours at 275 degrees. Cover with barbeque sauce.

Cover again with foil and bake 1 hour at 270 degrees. Cool completely before slicing (in refrigerator). Slice against grain. Place in serving dish, add some meat juices, barbeque sauce. Cover with foil. Heat in 300 degree oven for 30 minutes.
