BEEF SALAMI 
5 lb. cheap hamburger
5 tsp. Morton's Tender Quick curing salt
1 tsp. red pepper, cayenne
2 1/2 tsp. mustard seed
2 1/2 tsp. black coarse pepper
1 tsp. hickory smoked salt
2 1/2 tsp. garlic salt
2 1/2 tsp. onion salt

Mix together well. Cover and refrigerate. Remove every day for 3 days and mix well. Repeat 2 or 3 times daily.

On the fourth day, mix well and shape into 5 or 6 rolls. Place in pan and bake at 200 degrees for 6 hours.
