MEDITERRANEAN EGGPLANT 
4 c. diced eggplant
2 med. onion, sliced
2 tbsp. oil
1 clove garlic
1/2 tsp. sweet basil
1/8 tsp. thyme
1/2 tsp. oregano
1/2 tsp. salt
1/4 tsp. sugar
3 med. tomatoes

Saute onions in oil. Add eggplant and seasonings. Stir, simmer for 5 minutes. Peel and chop tomatoes. Add to the eggplant. Cover and simmer 10 minutes, stirring occasionally.

Servings: 8.
