PINEAPPLE CHEESE SALAD 
1 env. unflavored gelatin
2/3 c. cold water
1 sm. can crushed pineapple, drained
1/2 c. water
1 tbsp. lemon juice
1 (5 oz.) jar Pimento Cheese Spread
1 can mandarin oranges
1 sm. Cool Whip

Put the juice from the pineapple and the 1/2 cup water in a double boiler and simmer 5 minutes. Put the gelatin in the 2/3 cup water and let stand 5 minutes then put in with the pineapple juice. Add the lemon juice and stir until gelatin is dissolved.

Add the cheese spread in and beat with an egg beater. Pour into a dish and put in the refrigerator until it starts to thicken. Add the pineapple and mandarin oranges and fold in the Cool Whip. Chill.
