BRAN PECAN MUFFINS 
Grease 16 muffin pans and preheat oven to 350 degrees.

2 c. flour
2 tbsp. sugar
1/4 tsp. salt
1 1/4 tsp. baking soda
2 tbsp. coarsely grated orange rind
1 1/2 c. bran cereal (All Bran or 100% Bran)
2/3 c. chopped pecans
1/3 c. raisins
2 c. buttermilk
1 beaten egg
1/2 c. dark molasses
3 tbsp. melted butter

Sift dry ingredients into large bowl. Add orange rind, bran, pecans and raisins.

In a separate bowl, beat remaining ingredients together and add to redry ingredients, stirring slightly, just enough to mix. Fill muffin pans 3/4 full; bake 25 to 30 minutes or until done.
