IMPOSSIBLE TRIPLE CHEESE PIE | |
1 c. creamed cottage cheese (sm. curd) 1 c. shredded Mozzarella cheese (about 4 oz.) 1 c. shredded cheddar cheese (about 4 oz.) 4 eggs 1 1/2 c. milk 1 c. Bisquick baking mix 3/4 c. French fried onions Heat oven to 400 degrees. Grease pie plate, 10 x 1 1/2 inches. Mix cheeses, spread in plate. Beat eggs, milk and baking mix until smooth, 15 seconds in blender on high or 1 minute with electric mixer on high. Pour into plate; sprinkle with onions. Bake until golden brown and knife inserted in center comes out clean, 40 to 45 minutes. Cool 5 minutes. 8 servings. FOR 4 SERVINGS: Grease pie plate, 8 x 1 1/4 inches. Divide all ingredients except onions into halves. Decrease onions to 1/4 cup. Bake 30 to 35 minutes. FOR 2 SERVINGS: Grease two 10 ounce custard cups. Decrease cheeses to 1/4 cup each, eggs to 1, milk to 1/2 cup, baking mix to 1/4 cup and onions to 2 tablespoons. Bake 20 to 25 minutes. |
