YELLOW RICE AND CHICKEN | |
1 chicken fryer, cut into pieces Olive oil 1 onion, chopped 2 garlic cloves, chopped 6 oz. tomatoes 1 1/2 qts. water 1 bay leaf 2 tbsp. salt 1 lg. pkg. yellow rice 1 green pepper, chopped 1 (2 oz.) can petite peas 2 pimentos, chopped Fry chicken in oil with onion and garlic. When done add tomatoes and water. Boil 5 minutes. Add bay leaf, salt, yellow rice, and green pepper. Stir. Cover or place in 350 degree oven for 20 minutes. Garnish with peas and pimento. |
