SHRIMP AND MUSHROOM STEW 
1 lg. onion diced
Salt & pepper to taste
2 lg. peeled potatoes diced
1 bay leaf
Black pepper
3 tbsp. oil
1 lg. bunch scallions diced
1 lb. fresh mushrooms
1 tbsp. flour
1 can white corn (optional)
2 pkg. Herbox onion broth
1 1/2 to 2 lb. shrimp

Mix 1 quart of water with 2 packages of Herbox onion broth. Add salt and onion to water and bring to a boil. Now add diced potatoes, bay leaf, black pepper and let it keep cooking. When this is cooking fry in oil scallions. Add the mushrooms to it while it fries. Add the fried mixture to the potatoes in the pot. Cover and let cook for 45 minutes. When the cooking si almost complete, add the cleaned shrimp. Now try the flour in a dry pan as above and add the stew until the thickness desired. Add more salt at this time if desired.
