GIANT GINGER COOKIES 
4 1/2 c. flour
4 tsp. ginger
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. cloves
1/4 tsp. salt
1 1/2 c. shortening
2 c. sugar
2 eggs
1/2 c. molasses
1/4 c. sugar for coating

Mix together with mixer the shortening and sugar until fluffy. Add eggs and molasses and mix on slow speed until blended. Add flour mixture a little at a time. The dough will be stiff.

Use 1/4 c. measure for scoop. Roll into 2-inch balls. Roll balls in sugar to coat. Place on ungreased cookie sheet.

Bake 350°F for 12 - 14 mins or light brown. Cool 5 min. before removing from sheet to cooling rack.

Makes 4 -5 dozen.
