ORANGE BLACK BEAN SALAD 
1 c. black beans
1/2 c. oranges
1/2 c. diced apple
1/4 c. diced red onion

Rinse and drain the black beans. Peel, section, coarsely chop the oranges. Finely mince the flat leaf parsley and/or fresh thyme (to taste). Dress with olive oil and fresh lemon juice.

Use over veggies, salads, School/Work Lunches.
