1 lb. Italian sausage
1/2 c. finely chopped onion
6 eggs
8 oz. Mozzarella
1 lb. Ricotta
1 3/4 c. Aunt Jemima complete pancake mix
1/2 tsp. sweet basil
1/2 tsp. parsley
grated Italian cheese

Preheat oven to 350°F. Brown sausage with onion. Beat eggs in separate bowl. In large bowl, add pancake mix, eggs, drained sausage mixture, Ricotta, Mozzarella, basil and parsley. Pour into greased pan. Sprinkle lightly with grated cheese.

Bake for 25 to 35 minutes or until golden brown. Cut into squares and serve.
